Middle Eastern-inspired Shakshuka
Ingredients: For the sauce:
z 2 tablespoons olive oil z 1 large onion, finely chopped z 1 red bell pepper, diced z 1 yellow bell pepper, diced
z 3 cloves garlic, minced z 1 teaspoon ground cumin z 1 teaspoon paprika z 1/4 teaspoon cayenne pepper (adjust to taste for spice level) z 1 teaspoon sugar z 1 can (28 ounces) crushed tomatoes z Salt and pepper to taste z 1/4 cup chopped fresh parsley or cilantro (optional, for garnish)
For poaching the eggs: z 4-6 large eggs
z Salt and pepper to taste
To serve: z Crusty bread or pita bread, for dipping
