Veggies z 2 medium zucchinis - chopped into half- moons z 1 medium yellow squash - chopped into half-moons z 3 tbsp olive or vegetable oil z 1 tsp garlic powder z salt and pepper to taste z 1 tsp fresh thyme, chopped (may substitute ¼ tsp dried) z 1 tsp chopped fresh oregano (may substitute ¼ tsp dried) z 1 tsp chopped fresh parsley (may substitute ¼ tsp dried) How to Make It: 1. Whisk the oil, minced garlic, thyme, oregano, parsley, lemon juice, and salt and pepper to taste together well. Add to a large Ziploc bag along with chicken, close and toss well, then chill for 10-15 minutes. 2. Combine the zucchini and squash in a large bowl, adding the oil, garlic powder, salt and pepper thyme, oregano, and parsley, and then toss to mix well. 3. Place the chicken and veggies on metal or bamboo skewers. (A word of caution, if you use bamboo skewers, be sure to soak them first so they do not burn during cooking.) Cooking the chicken and vegetables on separate skewers will help them cook more evenly, but you can cook them together on the same skewers. 4. Grill for approximately 10 minutes, rotating the chicken until it is thoroughly cooked and the veggies are tender. Serve with lemon wedges to squeeze on top.
